one of my dear friends, erin from erin’s food files, has an exciting month ahead of her. why, you ask? well, she + her husband are expecting their first baby, due within the next few weeks. so, a bunch of her blogger friends, headed by jessica, decided to throw her a virtual baby shower!
since erin’s a born-and-bred southerner, we opted for a southern theme for the shower. for me, the first food that pops to mind when i think about spring in the south = strawberries. fresh, local strawberries. so, my husband + i headed to the farmer’s market, picked up a bunch of local strawberries, + i got baking.
y’all, these donuts turned out amazing! i ate mine a little warm from the oven (yum!), while my husband opted to eat his with a big scoop of vanilla ice cream, like you would with a strawberry cake. we both agreed that they were some of the freshest, tastiest donuts ever. + with the whole wheat flour + the fresh berries in there, they’re actually pretty good for you. so, strawberry lovers, you MUST give this recipe a try – a delicious treat that’s relatively guilt-free? sounds too good to be true, but i promise it is possible!

fresh strawberry whole grain donuts
makes about a dozen donuts, adapted from health, as seen on chocolate & carrots
ingredients for the donuts
1 cup whole wheat flour
1 cup unbleached all-purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
3/4 cup low-fat buttermilk
2 large eggs
1/4 cup honey
2 tablespoons melted unsalted butter
1 teaspoon vanilla extract
3/4 cup strawberries, coarsely choppeddirections for the donuts
preheat the oven to 400°F. spray the donut pan with canola oil spray + set aside.
in a bowl, combine the whole wheat flour, all-purpose flour, sugar, + baking powder. in another bowl, combine the remaining ingredients. pour the wet ingredients over the dry ingredients + stir until just combined.
either spoon the batter into the pan or put the batter into a large ziplock (or pastry) bag + squeeze into the pan, filling each donut mold about 2/3 full.
bake for 10-12 minutes, until golden brown on the bottom. allow the donuts to cool in the pan for about 3 minutes before emptying out onto a cooling rack.
once cooled completely, dip in strawberry glaze (see recipe below).
ingredients for the strawberry glaze
3 medium sized strawberries, puréed (about 2 tablespoons purée)
1-2 cups powdered sugardirections for the strawberry glaze
whisk the strawberry puree + powdered sugar together. dip donuts into the glaze, + allow to set/cool for about 10 minutes.

honestly, julie, i thought the same thing! i gravitated towards making these donuts automatically + then wondered after the fact if it means that she’s going to have a girl. only time will tell! =)

Oh wow. The glaze looks amazing. When I made them I couldn’t wait for them to cool and put the glaze on right away and although they were super yummy, it made them kind of ugly. These are perfect for a baby shower! Or anything. Congratulations to Erin.

ooh these strawberry doughnuts are spectacular. I never developed a taste for baked, but honestly I only baked them once. These are so appealing that I might give baked doughnuts another chance!
