fresh peach lemonade

there are few things that make my taste buds happier than fresh peaches in summertime. peaches are my absolute favorite fruit + i look forward to their arrival every year. juicy, scrumptious peaches are in full force at our farmer’s market recently, + while i’ve devoured most of them while standing over my sink, juice dripping everywhere, i’ve also tried to use them in new, fun recipes.

when i saw this recipe for fresh peach lemonade a couple weeks ago, i knew i had to try it. and sweet fancy moses, i’m so glad i did. this lemonade is absolutely wonderful + it makes for a crisp, refreshing warm weather drink. while it’s perfect just the way it is, i think it would be fantastic made into fruit tea by mixing it with brewed black ice tea. or, it would make an amazing summer cocktail if you added some white rum, vodka, or bourbon! regardless of which way you drink it, i know that you’ll love it!

fresh peach lemonade

makes 8 servings, adapted from cooking light

ingredients

4 cups water
2 cups coarsely chopped peaches
3/4 cup sugar
1 cup fresh lemon juice (from about 6 lemons)
4 cups ice
1 peach for garnish, cut into 8 wedges

directions

combine the first 3 ingredients in a medium saucepan over medium-high heat. bring to a boil; reduce heat, + simmer for 3 minutes. place peach mixture in a blender; let stand for 20 minutes.

remove center piece of blender lid (to allow steam to escape); secure blender lid on blender. place a clean towel over opening in blender lid. blend until smooth. pour into a large bowl. refrigerate for at least 3 hours.

press peach mixture through a sieve over a bowl, reserving liquid + discarding solids. stir in lemon juice. place 1/2 cup ice in each of 8 glasses. pour about 2/3 cup lemonade into each glass; garnish each glass with a peach wedge.

servings per recipe: 8 • calories: 98 • fat: 0.1 g • carb: 25.9 g • fiber: 0.8 g • protein: 0.5 g

yes! + since it doesn’t have much sugar, that means that each glass is less than 100 calories, which is pretty impressive!

i had never heard of it either ’til i saw it this month in cooking light magazine. i worried that it might be too sweet or syrupy, but that definitely wasn’t the case – it turned out even more delicious + refreshing than i had hoped!

This post makes me realise just how long it has been since I’ve had a proper peach, for some reason they seem underused in England but I must remedy that!

OMG this looks so refreshing! Saw it on twitter this morning and am STILL craving it! Peaches are one of my very favorite summer fruits. Adding a touch of vodka to this and sitting out by the pool = heaven. :)

Peaches are my favorite too! I also eat them over my sink haha, especially when they’re really juicy. I’ve never had them combined with lemon but I’m sitting here imagining how refreshing that must be. And I like that tea idea too [:

I went ahead and added this to my “to make immediately” list because when I saw this on IG, i started salivating and started craving peach lemonade SO badly. peaches are like one of my favorite fruits and i adore lemonade. oh amy, this just looks SOO refreshing and something I’d love to sip on while sitting on a porch or deck!
