Chicken Tamale Pie

I’m excited to report about a new gig I’ve taken on – blogging over at Wishing Well, the Vanderbilt Children’s Hospital blog. Wishing Well is a community of doctors, nurses, parents + children coming together to share stories and wisdom about raising healthy, happy children, and I feel privileged to be part of such an amazing group! I’ll be writing over there about family-friendly recipes and new motherhood, two topics that are near and dear to me.

For my first Wishing Well post, I’m featuring a simple + delicious recipe that the whole family will love – a scrumptious Chicken Tamale Casserole!  This is a quick, easy-to-assemble comfort food meal that’s hearty, but not too decadent. It starts with a tasty “tamale” layer with corn meal, green chiles, + corn, topped with a layer of delicious mexican-seasoned shredded chicken, enchilada sauce, + a bit of melty mexican-blend cheese. congrats on your new wishing well gig Amy :) This cheesy casserole looks fantastic, my hubby would definitely love this since he adores anything with enchilada sauce :) I love that its so quick to put together too!

Hi! I’m a new reader and can’t wait to click through and see your recipe. I’ve always loved tamales, but hesitate to make them myself because they’re so labor intensive. This pie seems like a great way to have the flavor of homemade tamales but without quite so much work. Will definitely be trying this soon!
