I’m excited to report about a new gig I’ve taken on – blogging over at Wishing Well, the Vanderbilt Children’s Hospital blog. Wishing Well is a community of doctors, nurses, parents + children coming together to share stories and wisdom about raising healthy, happy children, and I feel privileged to be part of such an amazing group! I’ll be writing over there about family-friendly recipes and new motherhood, two topics that are near and dear to me.
For my first Wishing Well post, I’m featuring a simple + delicious recipe that the whole family will love – a scrumptious Chicken Tamale Casserole! This is a quick, easy-to-assemble comfort food meal that’s hearty, but not too decadent. It starts with a tasty “tamale” layer with corn meal, green chiles, + corn, topped with a layer of delicious mexican-seasoned shredded chicken, enchilada sauce, + a bit of melty mexican-blend cheese. Hi! I’m a new reader and can’t wait to click through and see your recipe. I’ve always loved tamales, but hesitate to make them myself because they’re so labor intensive.
