I’d like to introduce y’all to one of the coolest things I’ve seen – the Grow-Your-Own-Mushroom Kit made by Back To The Roots. It’s a nifty little box, filled with 100% recycled dry plant material (saw dusk, corn cobs, soy husks, wheat bran) and oyster mushroom seed. I love Emily’s idea of mushroom pierogi (you know how I love my pierogi!) but I’d probably add some sauteed mushrooms to some fettuccine alfredo. This kit looks so freaking AWESOME!

I’ve been eyeing these for a while now actually! My favorite way to eat mushrooms, if I had to pick just one, might be sauteed with onions and folded into a soft omelette. Mmm…
